What’s the difference between raisins and sultanas?
Contrary to popular belief, sultanas and raisins are both made from green grapes. The difference between the two is simply the length of time they are dried in the sun.

The grapes used to make sultanas are dipped in order to split the skins before drying. This allows them to dry in around 10 days. Raisins are not dipped and take up to 20 days to dry in the sun, which means that they lose more moisture.

The sun causes natural sugar in the grapes to caramelise, causing raisins to turn a darker colour and have a stronger flavour. Conversely, sultanas are lighter in colour, as well as slightly juicier and sweeter than raisins.

Some Tips You Should Know Before Eating Dried Figs
Fig is one kind of fruits with beautiful outlooks and special tastes, as nobody can see the flower from the outside, so it is named after no flower by the ancient Chinese people. The scientist found that fig contains materials that can adjust the blood pressure and has anticancer effect, and it is even named the protector of man’s health in 21 century.

Still some people don’t want to eat them and the reason is that they have heard that there are small bugs in the fruit, it is not good for health and it is disgusting to have bugs in mouth. Some people even put the enlarged pictures of the figs with bugs on internet, while I would say I only agree part of it, every single fig would contain some bugs, but that’s not the point, the point is without these bugs help in pollination, the fruit would not be able to grow normally, as long as the fruit don’t have obvious holes on it, it would be totally fine to enjoy, here I mean the fruit, not the bugs, you can have the bugs removed by cutting the fig into 2 pieces. So the dried figs are fine to have with one simple bug-removing step.

What is the difference between Raisins, Sultanas & urrants?
 These three fruits are all dried grapes of some kind, with the difference depending on which type of grape is used.
Seedless raisin varieties include 'Thompsons', 'Flames', and 'Sultana'. (i.e Sultana's are a type of Raisin). The sultana grape is generally smaller than the 'normal' raisin but larger than currants, which are made from the Zante grape. Thompson Seedless Raisins are also known as Sultanas in some parts of the world.

What is the white coating on the outside of dried fruit?
As fruit is dried, the sugar from inside the fruit comes to the surface and you may get a white coating on the outside of dried fruits (especially dried figs & dates). This is sometimes mistaken for mould or sugar, when in fact it's just the natural sugars coming to the surface, which increase as the fruit ages.

How do you roast nuts/seeds?
Stove Top In a heavy bottomed pan, spread your nuts out in an even layer and heat over medium, shaking often. Do not overcrowd your nuts, keep stirring or shaking for about 5 minutes, or until nuts are fragrant and browned. Do not try to roast different kinds of nuts at the same time, as they will brown at different rates.

Oven You can also roast any kind of nut in a hot oven. Pre-heat an oven to 220 degrees. Place your nuts on a baking sheet and bake for a few minutes, watching carefully and shaking occasionally. They are done when golden and fragrant (5-10 minutes). Oven roasted nuts are a bit slower than stove top, but will be more uniformly browned without needing the use of oil.
